Chondrus Crispus better known as " Irish Moss" or Carrageen Moss, is a species of red algae that grows along the rocky parts of the Atlantic coast of Europe and North America. During the Ireland's Potato Famine in the 1800's, the natives ate Irish Moss off of the rocks to survive, due to lack of food sources. How incredible is that?! People actually ate Irish Moss and were able to sustain life just by only eating the Algae!

The Differences between Chondrus Crispus and Genus Gracilaria?

Genus Gracilaria is harvested in Tropical areas with warmer waters such as St. Lucia, Jamaica, and other surrounding Caribbean Islands. Chondrus Crispus "Irish Moss" is grown in areas such as Ireland, Maine, Peru, Canada, and other North Atlantic cold water regions. Chondrus Crispus has a flat, fan like a appearance with bushy leaves. It only grows on rocks. Irish Moss comes in a variation of colors such as dark purple,green or yellow. Irish Moss provides a strong smell and taste, and tends to be more expensive and more difficult to obtain due to it's  availability. This species is harvested during the warmer seasons.

Why do people call Jamaican Sea Moss Irish Moss? 

When Irish Immigrants settled in Jamaica centuries ago... they referred to the Sea Moss grown in Jamaica as "Irish Moss" instead of calling it by it's proper species which would be "Genus Gracilaria".

People have adapted to calling Jamaican Sea Moss "Irish Moss" or Chondrus Crispus, although Chondrus Crispus is Scientifically "Irish Moss" and look completely different from the Gracilaria species. 

Chondrus Crispus does not grow in Jamaica, it only grows in cold water areas such as Maine, Ireland, Canada, Peru, and other North Atlantic waters.
